Kitchen Recipes – Moroccan Spice Mix

British Lamb two lambsHello and welcome once again to my look into what’s hot on the markets and in the hedgerows of Leicestershire. This week we see the long awaited return of British lamb to our larders, whilst early in the season it can be a little less flavoursome than later in the summer I have a few tricks for you to try to bring this most tender of meats to life ,below is my Moroccan spice mix which we use to marinade rumps of lamb, it is a firm favourite with all our regulars at Maiyango !!!!

 Moroccan Spice Mix (Serves 4)

4 cloves of garlic

1 bunch coriander

2 tsp cumin

2 tsp turmeric

½ tsp harissa paste

1 preserved lemon

100 ml olive oil

Simply blend all the ingredients together in a food processor until they form a paste

Rub onto your desired cut of meat and leave to marinade for at least 24 hours then grill to your liking.
