Kitchen Recipes – Potato and Nettle

kitchen view with recipeWelcome once again to my weekly delve into foodie matters, this week  in the Maiyango kitchens we are getting to grips with some springtime flavours and colours,green is the buzz word of the season with some amazing spinach and brassicas available on the markets ,foraged greens are aplenty right now to, luscious and FREE!!! Nettles are a fabulous addition to any cooks larder with their amazing health benefits they really are a much neglected base for amazing soups and can be used in much the same way as spinach ,for example why not try things like nettle aloo just make a simple potato curry and add nettles at the end to give a healthy zing ,here is a simple potato and nettle recipe for you to try

 Potato and Nettle

Serves 4

2 large shallots finely diced

1 clove of garlic crushed

½ chilli finely chopped

½ inch root ginger chopped

½ tsp black onion seeds

½ tsp mustard seeds

1 tsp turmeric

3 large potatoes peeled and roughly diced

½ tsp garam masala

2 large hand fulls of young nettles roughly chopped

½ litre veg stock

Simply fry your shallots, garlic and ginger in a little oil until soft then add your seeds and spices, simply roll your potatoes around the pan to coat them in the spices and cover with your veg stock, add a little salt to taste then simmer until tender, when cooked drain into a colander and place your now spiced potatoes back into the pan then add your nettles the heat of the potatoes will wilt/cook your nettles then serve either on there own or with a nice piece of grilled fish or chicken ,SIMPLE !!
